About Pascal Armendariz
French-born and raised, Pascal Armendariz, 38, began his journey into the world of chocolate at an early age in his hometown of Saint Jean de Luz. His career started with an apprenticeship as a pastry chef in a local patisserie, where his passion for chocolate was sparked during school-based chocolate classes.
Eager to deepen his knowledge, Pascal pursued two diplomas at the Centre de Formation in Bayonne, France, while also competing in chocolate showpiece competitions in his spare time. His talent and dedication led him to work with several renowned chocolatiers, most notably the celebrated Patrick Roger in Paris, where he further honed his craft and creative flair.
In 2015, Pascal moved to Australia, where he took on the role of Head Chocolatier at Cacao, leading the team for three years. In 2019, his expertise and leadership were recognised by Koko Black, who appointed him as Head Chocolatier, overseeing chocolate production and bringing his European craftsmanship to the heart of the brand.
